Why am I gaining weight as a vegan?
Because most food that is technically plant-based is dense in calories and thin in protein. 4 things are happening at once.

Flour, oil and sugar are vegan
When you stopped eating meat, the easiest replacements were bread, wraps, crackers, chips, pasta and biscuits. Every one of them qualifies. Every one is flour, oil or sugar.
Oil is 120 calories a tablespoon and no protein. Roasted vegetables, pasta sauce, hummus and dressing quietly carry 3 or 4 of them a day.
You have less muscle than you did
Muscle you do not use and do not feed goes away slowly. Losing 5lb of it drops what you burn at rest, so the same food now leaves a surplus.
That is why this creeps rather than jumps. Each year of low protein and no lifting lowers the ceiling a little, and the food never changed.
It also runs the other way. Feed the muscle and train it, and the ceiling goes back up while you eat more, not less.
You did not gain this because you are vegan. You gained it because vegan flour is still flour.
Low protein makes you hungry again
Protein is the most filling thing you can eat, per calorie. A 10g breakfast of toast and coffee is why you are looking for something at 11am.
So the shortfall is not only a building problem. It is the reason the extra 400 calories arrive in the evening, most evenings.

The scale is the wrong instrument
Once you fix protein and start lifting, weight is the last thing to move. You can add muscle and lose fat for a month at the same bodyweight.
Most people read that flat number as failure and stop in week 3. Measure your waist at the navel instead, weekly, same time of day.
A waist down 1.5in at an unchanged 230lb is the outcome you actually wanted. The scale cannot see it.
What to change this week
Put a protein anchor in every meal before anything else: tofu, seitan, tempeh, lentils, soy milk, soy yoghurt. Build the meal around it.
Take the four staples out for twelve weeks: bread, chips, crackers, tortillas. That single cut removes most of the empty calories in the day above.
Keep the sweet tooth and feed it fruit. Grapes, apples and watermelon are how the ice cream stops being the plan at 9pm.
Then lift 3 times a week, and measure your waist rather than weighing yourself. The same day rebuilt this way runs about 2,300 calories and 190g of protein.
Knowing this is not the same as eating it.
